Council Brewing Company's Curtis Chism sent us an update on their Convoy area nanobrewery, which is set to join Kearny Mesa's craft beer ranks along with new entries with Common Theory and Quantum Brewing.
Chism reports that Council is fully licensed to brew and in the final stages of building out the tasting room. Once their 3BBL system is installed, the brew house should be functional by the week of April 14 and the brewery will soft open in mid-May.
Among the opening beers planned are a Orange Honey Wheat, Belgian Saison, Pale Ale, Nelson-hopped IPA, Imperial Red, and an Imperial Oatmeal Stout.
