This much-anticipated new offering rom CH Projects won't officially debut until Wednesday, April 16, but Eater caught up with Ironside Fish & Oyster's bar manager, Leigh Lcap, to see what these cocktail pros have lined up, libation-wise, for the India Street restaurant.
Lacap, who moves to Ironside from Craft & Commerce, says their cocktail line-up will be more of a book than a list; a whopping 50 drinks that will heavily feature fortified wines (sherry, madeira, port) and cocktails meant to pair well with chef Jason McLeod's seafood-dominated menu, particularly their oyster and raw bar dishes.
The list is divided into sections including "Uplifting" (champagne cocktails) and "Stimulating" (pre-dinner aperitifs). "Fortified" features cocktails like Thunderchild, a mix of Amontillado sherry, bourbon, Licor 43, orange curacao and lemon, while the "Nautical" category holds tiki-esque drinks, including a twist on the classic Fog Cutter made with light run, cognac, gin, Pedro Ximenez sherry, housemade orgeat, lemon, orange juice and cinnamon.
Pouring from the bar's 26 taps are 16 beers, eight wines, one draft cocktail and Coffee & Tea Collective cold brew.
Ironside's latest dinner seating will be 10 p.m. but the bar will stay open until 2 a.m. on Friday and Saturday.
