The Heart & Trotter Finds North Park Hub for Butchery

After months of searching, The Heart & Trotter has found a spot for their brick and mortar butchery, whose storefront build out with be partially funded by the wildly successful Kickstarter campaign they launched last fall.

Heart & Trotter founders James Holtslag and Trey Nichols have signed the lease for a 1,500-square-foot space with an outdoor dining patio at El Cajon Boulevard and Utah Street that will be home to their new butcher shop, market and eatery.

Nichols told Eater that they're applying for a beer and wine license and plan to serve house made sausages, sandwiches, and charcuterie and cheese platters. Chef Lhasa Landry is still signed on to oversee the kitchen, while Holtslag, a trained butcher, will handle the breakdown of whole animals, all sourced from within 250 miles of San Diego.

In addition to cuts of beef, lamb, pork and chicken, The Heart & Trotter will have a market component that'll carry everything from eggs and sauces to cookbooks and produce. Nichols estimates that the butchery may open its doors by late summer.
