Congratulations Carmel Valley, you're getting a Carnitas' Snack Shack. The crazy-popular North Park eatery has chosen the first outpost of its inevitable expansion; they'll be taking over the Del Mar Highlands Town Center site of The Counter, which closed abruptly last December.
Owner Hanis Cavin and Sara Stroud are working with Hatch Design Group to make some cosmetic changes to the building that will aim to bring the feeling of the all-outdoor original shack into the new 2,400-square-foot space. There will also be a front patio and their now-signature pig on the roof.
Chef Cavin says that while the menu will include all Carnitas' classics, the Carmel Valley restaurant has a kitchen three times the size of North Park, which will enable him to expand their offerings to include more salads and a veggie burger.
Stroud told Eater that they plan to have four to six craft beer taps and may eventually also open a back patio. This second Carnitas' Snack Shack is due in early August; follow along on Twitter.
