Inside Two Big Stone Brewing Co. Openings Downtown

This Tuesday, Stone Brewing Co. unveils their latest brainchild, a new hybrid of their concepts thus far called Stone Brewing Tap Room. Sitting within a lob toss of Petco Park, it could be considered a Stone Company Store with food or a mini World Bistro & Gardens, where you can buy Stone merch, eat and drink on-site, or take a growler to-go.

The 2,100-square-foot space, crafted with the rustic stone, reclaimed wood and metal that make up Stone's signature look, has 16 taps and an all-new food menu; the brewery is using the kitchen's existing pizza oven to bake up flatbreads, including Thai curry chicken and BBQ duck. The produce served here, from the flatbread toppings to salads, is sourced entirely from their own 19-acre Stone Farms in Escondido.

Steve Robbins, Stone's director of hospitality, says that the company hopes to help activate the East Village and told Eater that if this new iteration of satellite tap room is a hit, they'll consider opening more.

Robbins also shared that come opening night, they'll plant their flag within the ballpark. The new 4,000-square foot Stone Brewing Company at Petco Park, located on the fifth floor of the stadium, will launch on March 30; that eatery's food service will come online in late April.
