As creative director of Atlanta's FLIP Burger Boutique, it was only logical that Richard Blais would do his take on a burger at Juniper & Ivy, though he and his kitchen have wisely decided to keep it off the menu lest it define the restaurant. Doesn't San Diego have enough burger joints already?
Chef de cuisine Jon Sloan hinted at the makings of it in his Eater Interview, saying that the kitchen was playing with a rendition of the iconic In-N-Out burger.
The result is Juniper & Ivy's "In-N-Haute" burger, made with a custom blend of ground short rib, brisket and chuck mixed with dry aged beef fat. The patty and onions are cooked with mustard and the burger comes with animal-style sauce and bread and butter pickles on a brioche bun. Accompanied by thrice-cooked fries, J&I's burger is $17 and there are usually no more than a dozen orders available per night.
