Meet Kearny Mesa's Newest Nano, Quantum Brewing

A similarly beer-obsessed friend of Eater spied a sign on a Kearny Mesa storefront that led us to Quantum Brewing.

Dylan Wallace, a local engineer with over a decade of homebrewing behind him, is opening a new small brewery in a Kearny Mesa strip mall. Joining the area's growing brewery community, which includes superstar Societe Brewing Co., Helms Brewing Co. and the in-progress Council Brewing Company, Quantum will be powered by a one to two BBL brew system.

Wallace says he's a purist when it comes to style, so expect straightforward, time-honed recipes for beers including an IPA, Irish Red and Stout; in his tasting room, he plans to have nine staple beers available and three rotating handles.

With his science background as inspiration, Wallace is working with a designer on the 1,000-square-foot tasting room, which he says will have an old world feel - think rustic wood and nods to innovators like Leonardo da Vinci and Archimedes. Quantum Brewing should be up and running by June.
