The tireless Cohn Restaurant Group, who opened OB Warehouse, relaunched Indigo Grill and embarked on a major waterfront project just this year, is almost ready to debut a new craft beer-centric concept that will replace the company's La Jolla Strip Club, which shuttered over the summer.
Due to open this month is Draft Republic; according to the restaurant's Facebook page, the new gastropub features "innovative American cuisine", with house-made sausages and 40 taps that will dispense local beer and four kegged cocktails.
Design collaborator Philippe Beltran is working on the "Americana style decor with reclaimed teak wood, hand-crafted steel, tufted leather booths, two living green walls, and nine garage doors". Amping up the sports bar-type entertainment are a ping pong and billiards table, shuffle board and foosball, plus 14 flat screen TVs and a 100’ projection screen.
