La Jolla Brewing Company has soft opened in the village, fresh and shiny from a months-long retool by all-new ownership.
Head brewer Brett Stampf (Green Flash, Stone) just started on his inaugural batches; there will be six to eight house beers among the bar's two dozen taps. La Jolla Brewing Company will also sell growlers of their beer.
The partners, who include Dirty Birds owner Leigh Gibson, hope to bottle and distribute their beer; eventually, another larger space for production brewing will be secured.
The 200-seat eatery, with its spacious, dog-friendly patio, also comes with a backroom that will be used for overflow on the weekends and open for special events; it comes equipped with another 24 taps that could be used for tap takeovers by other local breweries.
Current operating hours are 4 to 11 p.m. daily. Beginning in February, they'll expand to Monday to Friday 11 a.m. to 11 p.m. and Friday and Saturday from 11 a.m. to 2 a.m.
