Here's a peek into the progress at Jsix, which has been shuttered since December for a major overhaul.
A February 15 soft opening is planned for the restaurant, whose main entrance will now be located to the side of the Hotel Solamar's lobby doors. A sunken 45-seat dining room will hold a handful of tables and a large community table, but the biggest change is the expanded bar and lounge area, which will seat 60 and function as the centerpiece of the new concept, which gives equal focus to both the food and a serious cocktail program.
The intention is to create a less formal and more neighborhood-friendly eating space that'll be polished and bright with a mix of subway tile, brick and stone.
Executive chef Christian Graves, his sous chef Jared Becker (Fish Public) will be cooking an ever-changing menu of shareable plates which Graves describes as a balance of health and wellness-focused dishes, celebrating superfoods and local produce, and "fatty gastropub" food.
Expect to see more of Graves' homemade charcuterie and whole animal dinners, from whole fried chicken to an entire halibut, poached, to share with your table.
