Eater is hearing that Bull Taco just signed a lease on a new space in North County, its fourth location.
Bull Taco, whose tagline is "Inauthentic Mexican", attracted lots of media coverage when it first launched in a concession stand at San Elijo State Beach Campground with a menu of exotic taco fillings, including foie gras.
Since then, the menu has mellowed, but owner Greg Lukasiewicz told Eater that he's redefining all current and future Bull Tacos, which will feature a specials board of more ambitious dishes and a "glamorous hunting lodge" look.
The new 2,000-square-foot Solana Beach eatery should be turned around in a month or so, after which Lukasiewicz will take on a remodel of his Oceanside location, which is also home to Bull Taco's executive chef Davin Waite's sushi and seafood annex, called Wrench & Rodent Seabasstropub.
Going forward, all Bull Tacos will feature a Wrench and Rodent component, and Lukasiewicz tells Eater that he's scoping out a location in Del Mar and further south, possibly University Heights. Bull Taco will also open a Pasadena outpost in Spring 2014 and later this year, plant a flag in Los Angeles' downtown Arts District.
