New local meat pros, dubbed The Heart & Trotter Butchery, are getting on the Kickstarter train with a campaign that just launched today; rewards range from a sausage-making class to a BBQ hosted by the company.
The $50,000 they're hoping to raise will go towards the permitting and engineering of their first brick-and-mortar shop, which they'd like to open by November.
Location-wise, the duo behind The Heart & Trotter had considered North County but now say that they're set on opening in North Park. Though they've looked at a few spots in the heart of the neighborhood, a space has not yet been secured.
The Heart & Trotter will specialize in whole animal butchery, working with sustainable farms and ranches within 250 of San Diego to source beef, chicken, pork and lamb. Beyond cuts of meat, they also plan to offer house made sausages, charcuterie, soups and stocks plus local produce, gourmet food and beer.
Ideally the future space will include a tasting room where the butchery can also hold educational classes and food pairing events.
