New Pie Whole Saloon & Bakery for Elizabethan Desserts

Baker extraordinaire Elizabeth Harris and her sweet shop, Elizabethan Desserts, scored a spot in Travel + Leisure's round-up of America's Best Bakeries, which highlights Harris' standout rhubarb-strawberry pie and decadent St. Louis gooey butter cake.

Big things are brewing for the Encinitas bakery; next week, they'll move their bakery and retail shop (currently on the grounds of the Sunshine Nursery near the Quail Botanical Gardens) to an all-new space at 114 N. El Camino Real.

As for the current store, an Elizabethan Desserts rep says that Harris plans to remodel and reopen it as Betty's Pie Whole Saloon, which will likely launch in October.

The eatery will seat 25, with room for more on an outdoor patio, and focus on sweet and savory pies; a Facebook page shows pies in the testing phase, including chocolate chip pie, BBQ chicken empanadas and a chicken pot pie. The menu will also include soups and chili; a beer and wine license is also in the works.
