The Spotted Cow Viet Kitchen's co-owner Jimmy Trinh and chef Boram Kim are alums from The Culinary Institute of America who've logged stints in Michelin-starred kitchens from Le Bernardin to Cafe Boulud. Now, they're teaming up with Trinh's mother, who owns Pho La Jolla, for a new fast casual, make-your-own pho concept that's due this month in San Diego.
Scheduled for a mid-August launch, the first outpost of The Spotted Cow Viet Kitchen will join the food court at Kearny Mesa's new Zion Market. Diners will be able to build their own bowl of noodle soup or noodle salad with different broths, noodle varieties, meat, local vegetables and salads.
The quick-service eatery will also serve Vietnamese barbecued baby back ribs and chicken, egg rolls and banh mi sandwiches stuffed with gyro-style broiled meat. Vegan options will include vegan spring rolls and glass noodles.
