It's so close we can almost taste it. BNS Brewing & Distilling Co. soft opens this weekend. They'll be open from noon to 10 p.m. Saturday and Sunday; after that, operating hours are 10 a.m. to 10 p.m.

BNS Brewing & Distilling Co. is a craft brewery, distillery and home brew store under one gigantic roof, located in East County just off Highway 67 in Santee. Their handsome new tasting room includes 20 taps and a copper chill line that runs the length of the bar, designed to keep your taster or pint at a refreshing drinking temperature. To start, BNS will launch with four core beers (the Wild West-inspired Gunfighter Golden Ale, Flintlock Black IPA, Revolver American IPA and Saloon Girl Saison ) crafted by head brewer Dan Jensen and co-founder Wes Richey. Eventually, they'll can and bottle all their beers.

Though co-founder and distiller Andrew Arrabito originally intended to make "moonshine", the company has collectively decided to focus on producing more artisanal spirits, including gin, whiskey, bourbon and vodka. Bottles should be on shelves next month, but for now, a distillery tour includes small tastes of the spirits on hand.

Outside, a large family-friendly beer garden is lined with grape and hop vines and houses a turtle pond; herbs and other edibles dot the landscaping, and there is potential to expand the growth to a rooftop garden. A regular food truck schedule should launch soon.
