Prager Brothers Artisan Breads is debuting their new 1,300 square foot bakery and retail space in Carlsbad today.
Carlsbad natives Louie and Clint Prager first launched their bread business last year, by borrowing the wood fired oven at Encinitas' Blue Ribbon Artisan Pizza and selling their loaves at a nearby farmer's market.
Head baker Louie first learned his craft in college, when he apprenticed for a small bakery and started an underground bread delivery service for his professors and their colleagues; his hand shaped loaves are naturally leavened and free of commercial yeast, which yields a healthy, rustic loaf.
The retail portion of the bakery will be open Wednesday to Friday from 11:30 a.m. to 1:30 p.m. and 4 to 6 p.m., and Saturdays from 9 a.m. to noon. Prager Brothers Artisan Breads will be offering their signature country loaf, plus lemon rosemary, pumpkin polenta, walnut raisin, sesame semolina, sprouted spelt and more. In addition, they'll sell flatbreads topped with locally sourced ingredients.
Their breads will also still be available at local farmer's markets — Wednesdays in Encinitas, Saturdays in Vista, and Sundays in Leucadia and Rancho Santa Fe.
