JC Colón has signed on as the new executive chef of Leroy's Kitchen + Lounge in Coronado. This is the first exec chef billing for Colón, an alum of NYC's French Culinary Institute who worked for the Urban Kitchen Group since 2007, rising to sous chef of CUCINA urbana and then taking on the chef de cuisine role at Kensington Grill when Hanis Cavin departed to open Carnitas' Snack Shack.
Colón replaces Gregory Chavez, who left Leroy's last month to assume the exec chef role at India Street's Wine Vault & Bistro.
A rep for Leroy's Kitchen + Lounge says that Colón will be putting his own stamp on the restaurant's eclectic global menu; expect at least 50% of the menu to change within the next few weeks. What might you find when you return to Leroy's? The chef's culinary perspective emphasizes seasonal sourcing and nose-to-tail cookery as well as house curing meats and fish.
