Chef Colin MacLaggan has been tapped as the executive chef of the new Ballast Point Brewing & Spirits restaurant in Little Italy.
MacLaggan, who sold his Avenue 5 Restaurant & Bar in Bankers Hill last month, is currently helping the brewery design the eatery's open kitchen and dining room while putting the menu through its paces.
The Cordon Bleu-trained chef and San Diego native told Eater that the all-day menu will focus on appetizers and light mains, covering of an equal mix of seafood, meat and vegetable-based plates. He plans on utilizing local ingredients and house-making everything from smoked fish to cured meat and authentic Bavarian pretzels.
As founder Jack White mentioned in his Eater Q&A, Ballast Point beer will be infused into much of the food, and the MacLaggan says that each dish will likely have two beverage pairing suggestions, a year-round beer and a seasonal Ballast Point brew.
