Eater has learned that the L'Auberge Del Mar has just parted ways with its executive chef, Scott Thomas Dolbee, who joined the hotel in January 2012 to fill the shoes of exiting chef Paul McCabe. Dolbee oversaw Kitchen 1540 as well as food and beverage operations for the property; a rep tells us that general manager Michael J. Slosser is still deciding what to do with the position. In the meantime, Kitchen 1540 will still hum under Jon Bautista (Alinea, ink.), who was recently promoted to chef de cuisine. [EaterWire]
