This summer, a polar bear with a sweet tooth is migrating to Pacific Beach.
A new warm-meets-frozen dessert concept called The Baked Bear is coming to 4516 Mission Boulevard next to Fatburger; their grand opening is scheduled for April 27.
The shop specializes in custom ice cream sandwiches, made from freshly-baked cookies (in 10 flavors), waffles and brownies; their signature Baked Bear is a freshly baked cookie served in a pizza pan and topped with a scoop of ice cream for $4.95.
The menu also includes sundaes, chocolate-dipped bananas, milkshakes with cookie mix-in's and coffee or root beer ice cream floats.
The Baked Bear owners' back story is equally sweet. Rob Robbins and Shane Stanger grew up together in San Diego with a childhood pact to open a restaurant one day. Those plans went on hold during a short period of hibernation; after graduating college in 2009, Robbins went into the clothing industry in Orange County and Stanger worked in film production in L.A.
The friends decided to come back home to ink the 1,465-square-foot lease in January. When The Baked Bear opens, expect a modern interior seating up to 32 featuring salvaged wood, metal tables, concrete floors and blue colors that match its arctic logo. Operating hours are 11 a.m. to 11 p.m. all days except Thursday through Saturday, when they'll stay open until 2 a.m.
