George's California Modern, the main dining room at George's at the Cove, has a new chef de cuisine.
Joining executive chef Trey Foshee is Jon Bautista, who comes to the La Jolla restaurant from Kitchen 1540 at L'Auberge Del Mar.
Bautista took the helm at Kitchen 1540 when their exec chef left earlier this year. He starts at George's on December 20 and tells Eater that he's honored to be joining the team there, saying that he was inspired to apply for the post after being "blown away" by a recent TBL3 experience; he considers Foshee a leader in changing the way people see San Diego's culinary scene.
Foshee says that he hired Bautista for his culinary skills and strong leadership; they'll work collaboratively, developing dishes for George's California Modern and TBL3.
