Roosterfish Rocks Bar, the new seafood restaurant replacing The Palm, has signed up a chef who's already familiar with downtown dining and ocean cuisine; Sean Patrick Langlais from The Oceanaire Seafood Room.
Roosterfish will feature a sushi bar and Langlais, who grew up in Carlsbad, has plenty of experience in that area; he trained under a master sushi chef for two years and worked at the Gaslamp's Taka Sushi for four. The chef also spent a couple years at Thomas Keller's Bouchon in Yountville.
During Brian Malarkey's Top Chef-era at Oceanaire, Langlais was his exec sous; when Malarkey left to open Searsucker, Langlais took over as executive chef, a position he's held for the last four years. Langlais will finish out the year at Oceanaire before focusing on the Roosterfish project.
