As Sea Rocket Bistro sails into the sunset (to be replaced by a mac and cheese concept), its executive chef of a year and a half, Tommy Fraioli, is gearing up to embark on his next culinary voyage.
Fraioli, who placed seventh in the recent San Diego Bay Wine & Food Festival's Chef of the Fest contest, is headed to Beaumont's Eatery in Bird Rock, where he'll join executive chef George Morris as his new chef de cuisine.
Fraioli's currently paring down Sea Rocket's menu, though favorites like the short ribs and burger will stay until the end; he tells Eater that he'll start training in Beaumont's kitchen while overseeing Sea Rocket's final days (it closes December 8).
He says that he's looking forward to learning from Morris; the two chefs are culinary BFF's who have influenced each other's menus and are looking forward to collaborating on new dishes. Morris (meet the chef here) says that he wants to take the menu in a more modern, local and interesting directions and that having a strong right hand will help him push Beaumont's food forward.
