We've been tracking the progress as South Park's Vagabond was reinterpreted into a new Belgian beer bar, which just soft opened in the neighborhood last weekend.
Brabant Bar & Cafe is now open at 3 p.m. daily; owner Adam Parker curated an 80+ bottle list of Belgian gems and the 16-tap tower holds a mix of Belgian and Belgian-inspired beer. The current line-up includes Allagash's Confluence and The Lost Abbey's Mayan Apocalypse Judgment Day; tall cabinets hold brewery or beer-specific glassware.
The menu by chef Kevin Lissy features beer pairing suggestions for everything from house made bratwurst to whole roasted trout and braised rabbit. Mussels and twice-fried frites come three ways, including a rendition made with duck stock, duck chicharones and duck rilletes. Brunch will debut soon, and Brabant plans to compete in this weekend's SoNo Chili Cook-off with a 'Belgian Christmas chili'.
Brabant also has an extensive spirits program, from Belgian liqueur cocktails (The Little Corporal mixes Mandarine Napoleon with champagne) to table-side absinthe service.
