Eater's early report on The Headquarters project prompted local Dallmann Confections to inquire about a space; eight months later, their new chocolate boutique has opened, joining the San Diego-based Puesto and Venissimo Cheese in the downtown complex.
Owner Isabella Valencia comes from a family of sweet specialists. In the 1950s, her grandfather opened a pastry shop in Austria and he's the inspiration for a box of chocolates at the new shop; this location only sells pre-curated chocolate boxes, rather than the individual chocolates available at Dallmann's Flower Hill Promenade store. Other themed boxes include exotic flavors (bacon, passionfruit caramel with togarashi spice), a San Diego souvenir box with lavender and mulberry chocolates and a seasonal Thanksgiving box that holds confections in flavors including pecan-molasses and pumpkin space.
Also new are chocolates designed to pair with wine or beer; the beer box even has specific local beer recommendations. Valencia, who crafts her chocolates in an El Cajon commercial kitchen, says that Dallmann's next expansion may be to Los Angeles.
