2013 has been a momentous year for Coronado Brewing Company, which opened a Bay Park brewery and tasting room in January. Now, 2014 is shaping up to be the biggest one yet; the company just announced that they're opening a new eatery in Imperial Beach.
Coronado Brewing Company will be taking over an 1,800-square-foot diner and adding an additional 500-square-feet to the space; they hope to open by mid to late Spring 2014. The new spot won't have brewing capacity, but special beers will be made just for the location. Ron Chapman, who co-founded CBC with his brother Rick, is an IB resident; he told Eater that he's looking forward to boosting the craft beer culture in the area and says that this pub is the first of several that CBC hopes to open in San Diego.
Ron's son, Kasey, is the company's head chef; he'll be overseeing the kitchen for Imperial Beach and plans to vary it a bit from their original brewpub's menu while still keeping it affordable and accessible. The Chapman's also recently purchased a food truck that'll be up and running in four months; it'll be used for events but will primarily be parked at their Knoxville Street tasting room to feed the lunch crowd.
Ron Chapman told Eater that CBC has also put the wheels in motion to launch a craft distillery which will be installed in a corner of their 20,000-square-foot Bay Park brewery. The distillery is likely a year out, but we're hearing they may start with gin.
The company is just finalizing the purchase of the Knoxville brewery space and the building next door; Chapman says that owning the building will allow them to make changes and improvements; one proposed addition is an outdoor beer garden. He anticipates that the CBC will outgrow this current location in three to four years so they're on the lookout for new properties to continue the brewery's expansion.
