Eater San Diego got a tip that a chef from Copenhagen's two Michelin-starred Noma (some say it's the world's best) was in town to cook a private dinner in Rancho Santa Fe. Local chef Keith Lord (H Events) was in the kitchen with Noma's Chef de Cuisine, Matthew Orlando, and shared some dishes from the event, a benefit for Kids Eco Club. Chef Orlando went by Catalina Offshore to pick up sea urchin, which he topped with pine vine and Icelandic red seaweed. There were vegetables dipped in grass emulsion and rolled in a malt soil, scallops with shaved bacon and elderberry butter, and roasted duck breast with leeks, sweet pea paste and an oyster emulsion.
