Rejoice, beer friends. The sign's down at Stone Brewing World Bistro & Gardens - Liberty Station, signaling that the brewery restaurant is open for your business starting today at 11 a.m.
The 23,500-square-foot space, imagined by David Robinson Design and Stone Brewing Co. CEO and co-founder Greg Koch, has room for 600 thirsty diners, a central bar that holds two sets of 40 taps pouring the brewery's core lineup and seasonal specialities, plus guest beers, and a Stone company store for purchasing growler fills and brewery merch.
The entryway-facing beer garden that'll include plentiful seating, a bar, and water and fire elements is still a few weeks from completion, but there's a sunny inner courtyard complete with a bocce ball court and a grassy outdoor nook and bar that will host movie screenings starting in July.
Brewer Kris Ketcham is crafting some signature beers in Liberty Station's 10-barrel brewery including J's OT Stout, an oatmeal stout that's on tap right now, and a forthcoming Stone Brewing World Bistro & Gardens-Liberty Station Commemorative Imperial Stone Pale Ale.
Exec chef Tasha Lopez has been with Stone for six years; her Liberty Station menu shares some core items with their Escondido bistro, but her kitchen is developing global-inspired dishes that'll be unique to this location. Starting soon are Meatless Mondays and Sunday brunch (launching June 2) featuring produce from local farms, including their newly re-opened Stone Farms.
Operating hours are Monday to Thursday, 11 a.m. to 11 p.m., Friday and Saturday, 11 a.m. to 12 a.m and Sunday, 10 a.m. to 11 p.m. (brunch from 10 a.m. to 3 p.m.) beginning June 2; until then, Sundays hours start at 11 a.m.
